Chocolate Avocado Mousse

We were making dessert for some vegan friends as part of their post-birth Mealtrain, and decided to make a chocolate avocado mousse or pudding.

But, after checking more carefully, we noticed that our friends requested 'no peanuts'.

So, we pivoted to this one: https://www.foodnetwork.com/recipes/giada-de-laurentiis/chocolate-avocado-mousse-recipe-2110024

We used 5 avocados, b/c their we small, light maple syrup instead of agave, and added a bit of ripe banana that we already had for the first recipe.  We used 3/4 cup chocolate chips, and J still felt like it could have used more chocolate flavor.  N observed that it could benefit from a hint of cinnamon.

It was super delish, and better than our previous dal.

We used frozen spinach & added chopped ginger. It may be good to double the recipe next time.

Added cornstarch in the end w/o a liquid -- bad idea.

Otherwise, this was delish w/goat milk yogurt.

We skipped the mint.  It was pretty good, but not sweet enough.  Adding a bit of honey made it great!

6-hr Pork Shoulder Roast

We hosted a dinner party today.  The star of the show was this pork roast:

It was all quite delicious.
