6-hr Pork Shoulder Roast

We hosted a dinner party today.  The star of the show was this pork roast:

We served it with corn on the cob, kale salad w/marinated beets, and chicken livers for apps.

It was all quite delicious.

Carnitas

J. enjoys roasting large chunks of meat. Today we tried carnitas. We used this recipe from our favorite blogger:


They turned out a bit dry, but delicious nonetheless:


We assembled them into tacos with TJ salsa and avo, as follows:

Pork Shoulder - Sunday Roast

J. decided to brave the pork shoulder roast again today.  This was roughly the recipe that was followed:

The project started with 6.3lb bone-in fat-on pork shoulder (Boston Butt):


The pork stayed in the oven for 5.75 hours.  In the last hour, potatoes and brussels sprouts were added to the pork juices:


The final results were delicious:

Tuscan Pork Belly

We shortened some of the steps, like the marinade time.  It came out a bit tough for pork belly, but still tasty.

Pork Stew with Potatoes & Chard

Our version:
- chard instead of fennel
- potatoes instead of squash (added before going in the oven)
- chopped fresh serrano instead of cayenne

Pork Shoulder Stew

Inspired by an excess of peppers after a girls' campfire weekend.

Remade on:
12/10/12 - Used less fennel seed than last time (it is unclear whether we used exactly the amount the recipe called for slightly less) and more rosemary. This made things better, we think.
